Dovetail Brewery Tours Are Back After 3

The tour features equipment not typically seen in American breweries, a water tasting and samples of Dovetail beer to enjoy.

RAVENSWOOD — Dovetail Brewery is bringing back its monthly brewery tours after putting them on hold during the pandemic.

The first tour starts noon Saturday at the brewery's taproom, 1800 W. Belle Plaine Ave. The 90-minute tours will continue every third Saturday of the month.

The tours are first come, first serve for people 21 and older and cost $30. A maximum of 24 people are allowed on the tour.

Attendees will enjoy three pours of Dovetail beers and other beer samples, a complimentary Dovetail Brewery glass and a 15 percent discount on to-go beer that day.

Guests also will get an in-depth tour of the brewery's production facility and learn about Dovetail's 115-year-old copper kettle from Weihenstephaner in Germany, the oldest brewery in the world.

Tours include hop rubbing, malt tasting and a water tasting using the brewery's custom-built water processing plant.

"We have them taste Chicago water and then taste filtered water that has all the minerals taken out of it," said Jenny Pfafflin, one of Dovetail's brewers. "And then we have them taste our brewing water. You taste three different waters, and it's a really unique process and something I don't think many people have done."

Dovetail opened in 2016. Before the pandemic, the tours were a staple for the business and were named one of the best brewery tours in the city by Chicago Magazine in 2019.
